Ingredients
- 200g spaghetti
- 100g pancetta
- 3 egg yolks
- 50g grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Cook the spaghetti in salted boiling water until al dente.
- In a skillet, cook the pancetta until crispy.
- In a bowl, whisk together the egg yolks and Parmesan cheese.
- Drain the spaghetti, reserving some pasta water.
- Combine the hot spaghetti with the pancetta and remove from heat.
- Quickly stir in the egg mixture, adding reserved pasta water as needed to create a creamy sauce.
- Season with salt and pepper.
- Serve hot, garnished with parsley if desired.
Notes
Use fresh, high-quality ingredients. Do not add cream – the creaminess comes from the egg and cheese mixture.
