Description

A classic Italian Carbonara featuring creamy egg yolks and crispy pancetta, perfect for family dinners.


Ingredients

  • 200g spaghetti
  • 100g pancetta
  • 3 egg yolks
  • 50g grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. Cook the spaghetti in salted boiling water until al dente.
  2. In a skillet, cook the pancetta until crispy.
  3. In a bowl, whisk together the egg yolks and Parmesan cheese.
  4. Drain the spaghetti, reserving some pasta water.
  5. Combine the hot spaghetti with the pancetta and remove from heat.
  6. Quickly stir in the egg mixture, adding reserved pasta water as needed to create a creamy sauce.
  7. Season with salt and pepper.
  8. Serve hot, garnished with parsley if desired.

Notes

Use fresh, high-quality ingredients. Do not add cream – the creaminess comes from the egg and cheese mixture.
