Experience the rich flavors of authentic birria tacos, a beloved Mexican street food featuring tender, slow-cooked beef in a crispy tortilla with gooey cheese.
Ingredients
- 2 lbs beef chuck roast or brisket
- 4 dried guajillo chilies
- 3 dried ancho chilies
- 2 dried chipotle chilies
- 1 white onion, diced
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- Salt and pepper, to taste
- 2 cups beef broth
- 1 tablespoon apple cider vinegar
- Tortillas
- Oaxaca cheese or Manchego cheese
Instructions
- Marinate the beef with onions, garlic, chilies, cumin, and orange juice for at least 4 hours.
- Slow cook the beef using braising or roasting method until tender.
- Make the birria taco sauce by blending soaked chilies, spices, and broth, then simmer.
- Prepare the consomé by blending and straining a mixture of chilies, garlic, and broth.
- Warm tortillas and fill them with birria meat and cheese, then cook on both sides until crispy.
- Serve with consomé for dipping alongside traditional toppings like onion, cilantro, and lime.
Notes
For extra richness, add a knob of butter to the consomé. Toppings can be customized to your preference.
