Description

Experience the rich flavors of authentic birria tacos, a beloved Mexican street food featuring tender, slow-cooked beef in a crispy tortilla with gooey cheese.


Ingredients

  • 2 lbs beef chuck roast or brisket
  • 4 dried guajillo chilies
  • 3 dried ancho chilies
  • 2 dried chipotle chilies
  • 1 white onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • Salt and pepper, to taste
  • 2 cups beef broth
  • 1 tablespoon apple cider vinegar
  • Tortillas
  • Oaxaca cheese or Manchego cheese


Instructions

  1. Marinate the beef with onions, garlic, chilies, cumin, and orange juice for at least 4 hours.
  2. Slow cook the beef using braising or roasting method until tender.
  3. Make the birria taco sauce by blending soaked chilies, spices, and broth, then simmer.
  4. Prepare the consomé by blending and straining a mixture of chilies, garlic, and broth.
  5. Warm tortillas and fill them with birria meat and cheese, then cook on both sides until crispy.
  6. Serve with consomé for dipping alongside traditional toppings like onion, cilantro, and lime.

Notes

For extra richness, add a knob of butter to the consomé. Toppings can be customized to your preference.
