Ingredients

  • 1 bunch of asparagus
  • 2 tablespoons olive oil

Instructions

  1. Trim the tough ends off the asparagus and then rinse them under cold water.
  2. Bring a pot of water to a boil and blanch the asparagus for about 2-3 minutes until they’re bright green and tender-crisp.
  3. Transfer the asparagus to an ice bath to stop the cooking process.
  4. Drain the asparagus and pat them dry.
  5. Whisk together olive oil, lemon juice, salt, and pepper in a large bowl.
  6. Add the blanched asparagus and toss to coat.
  7. Include shaved Parmesan cheese and cherry tomatoes if desired.
  8. Serve chilled or at room temperature.
