Ingredients
- 1 bunch of asparagus
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt to taste
- Pepper to taste
- Shaved Parmesan cheese (optional)
- Cherry tomatoes (optional)
Instructions
- Trim the tough ends off the asparagus and then rinse them under cold water.
- Bring a pot of water to a boil and blanch the asparagus for about 2-3 minutes until they’re bright green and tender-crisp.
- Transfer the asparagus to an ice bath to stop the cooking process.
- Drain the asparagus and pat them dry.
- Whisk together olive oil, lemon juice, salt, and pepper in a large bowl.
- Add the blanched asparagus and toss to coat.
- Include shaved Parmesan cheese and cherry tomatoes if desired.
- Serve chilled or at room temperature.
Notes
