Description

A vibrant and refreshing asparagus salad with feta and cherry tomatoes, perfect as a side dish or light meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 lb asparagus, tough ends removed, cut into 3-4 pieces
  • 1/2 teaspoon lemon zest
  • 2 large garlic cloves, finely chopped
  • A pinch of salt
  • 10 oz cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 3 oz feta cheese, crumbled
  • A few sprigs of fresh dill
  • 1.5 tablespoons lemon juice
  • 1.5 tablespoons olive oil
  • 2 teaspoons honey
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • A pinch of black pepper


Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the chopped asparagus and lemon zest, cooking for about 1 minute.
  3. Incorporate the finely chopped garlic and sauté for another 1-2 minutes, stirring occasionally until the asparagus is bright green and slightly charred.
  4. Remove the skillet from heat and let the asparagus cool in a salad bowl.
  5. While the asparagus is cooling, halve the cherry tomatoes and slice the red onion.
  6. In a small bowl, whisk together the dressing ingredients: lemon juice, olive oil, honey, Dijon mustard, salt, and black pepper.
  7. Add the halved tomatoes, sliced onion, crumbled feta, and fresh dill to the bowl containing the cooled asparagus.
  8. Pour the dressing over the salad and gently toss to combine.
  9. Serve at room temperature or chilled.
