Description
A vibrant and refreshing asparagus salad with feta and cherry tomatoes, perfect as a side dish or light meal.
Ingredients
- 1 tablespoon olive oil
- 1 lb asparagus, tough ends removed, cut into 3-4 pieces
- 1/2 teaspoon lemon zest
- 2 large garlic cloves, finely chopped
- A pinch of salt
- 10 oz cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 3 oz feta cheese, crumbled
- A few sprigs of fresh dill
- 1.5 tablespoons lemon juice
- 1.5 tablespoons olive oil
- 2 teaspoons honey
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon salt
- A pinch of black pepper
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chopped asparagus and lemon zest, cooking for about 1 minute.
- Incorporate the finely chopped garlic and sauté for another 1-2 minutes, stirring occasionally until the asparagus is bright green and slightly charred.
- Remove the skillet from heat and let the asparagus cool in a salad bowl.
- While the asparagus is cooling, halve the cherry tomatoes and slice the red onion.
- In a small bowl, whisk together the dressing ingredients: lemon juice, olive oil, honey, Dijon mustard, salt, and black pepper.
- Add the halved tomatoes, sliced onion, crumbled feta, and fresh dill to the bowl containing the cooled asparagus.
- Pour the dressing over the salad and gently toss to combine.
- Serve at room temperature or chilled.
