Description
A refreshing and delicious apricot sorbet that’s perfect for cooling down on hot days while satisfying your sweet tooth.
Ingredients
- 2 cups chopped and pitted apricots (approximately 8 apricots)
- 2 tablespoons lemon juice (fresh squeezed)
- 1 cup hot water
- 1 cup granulated sugar
Instructions
- Place chopped apricots and fresh squeezed lemon juice in a food processor. Process until you achieve a smooth mixture.
- Pour the apricot mixture into a fine sieve set over a bowl. Using a soup ladle, help the apricot mixture pass through the sieve by rotating the ladle in a circular motion until you are left with a thick pulp. Discard the pulp.
- In a separate bowl, combine hot water with sugar, stirring until all the sugar is fully dissolved. Allow the mixture to cool, then add it to the apricot puree.
- Cover the apricot mixture and store it in the refrigerator until chilled, at least one hour or overnight for the best results.
- Once chilled, place the apricot mixture into the frozen bowl of an electric ice cream maker.
- Churn the mixture according to your machine’s directions until it reaches a frozen consistency, which typically takes about 20 minutes.
- Remove the sorbet from the bowl and transfer it into a freezer-safe container. Place in the freezer for at least one hour to allow it to fully firm up.

Choose ripe, sweet apricots for the best flavor and adjust sugar to taste if necessary.
