Delicious and simple Apricot Oatmeal Crumble Bars that combine juicy apricots with a buttery oat crumble, perfect for snacks or desserts.
Ingredients
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 1/2 teaspoon cinnamon
- 2 cups apricots, diced
- 1 tablespoon lemon juice
- 1/4 cup honey or maple syrup
Instructions
- Preheat your oven to 350°F (175°C).
- Combine oats, flour, brown sugar, melted butter, and cinnamon in a bowl to form the crumble mixture.
- Toss diced apricots with lemon juice and honey in another bowl.
- Press half of the crumble mixture into a greased 9×9 inch baking dish.
- Spread the apricot mixture over the crust.
- Crumble the remaining oat mixture over the apricots.
- Bake for 30-35 minutes or until golden brown.
- Allow to cool before cutting into bars and serving.
Notes
For a gluten-free version, use certified gluten-free rolled oats and a gluten-free flour blend. You can also substitute coconut oil for butter for a dairy-free option.
