Description

Ingredients

  • 2 cups apricots, pitted and chopped
  • 2 cups vodka
  • 1 cup sugar
  • 1 cup water
  • 1 vanilla bean (optional)


Instructions

  1. Combine the chopped apricots and vodka in a large glass jar. Seal and let it sit in a cool, dark place for 4-6 weeks.
  2. Strain the mixture through a fine mesh sieve to remove the solids.
  3. Combine sugar and water in a saucepan, and heat until the sugar is dissolved to create a simple syrup. Let it cool.
  4. Mix the apricot-infused vodka with the simple syrup.
  5. If using, split the vanilla bean and add it to the liqueur.
  6. Bottle the liqueur and let it age for another 1-2 weeks for improved flavor.
