Ingredients
- 2 cups apricots, pitted and chopped
- 2 cups vodka
- 1 cup sugar
- 1 cup water
- 1 vanilla bean (optional)
Instructions
- Combine the chopped apricots and vodka in a large glass jar. Seal and let it sit in a cool, dark place for 4-6 weeks.
- Strain the mixture through a fine mesh sieve to remove the solids.
- Combine sugar and water in a saucepan, and heat until the sugar is dissolved to create a simple syrup. Let it cool.
- Mix the apricot-infused vodka with the simple syrup.
- If using, split the vanilla bean and add it to the liqueur.
- Bottle the liqueur and let it age for another 1-2 weeks for improved flavor.
