Description

Buttery, tender cookies filled with jam and sparkling sugar; a classic treat for any occasion.


Ingredients

  • 1 cup unsalted butter (softened)
  • 3/4 cup granulated sugar (+ additional for rolling)
  • 1 egg yolk
  • 2 tsp vanilla extract
  • 1/4 tsp almond extract
  • 2 1/4 cup all purpose flour
  • 1/4 tsp salt
  • 1/2 cup apricot jam


Instructions

  1. Preheat the oven to 350°F (180°C) and line 2 baking sheets with parchment paper.
  2. Cream the butter and sugar together on medium-high speed until light and fluffy.
  3. Add egg yolk, vanilla extract, and almond extract. Beat until fully combined.
  4. Gradually mix in the flour and salt ½ cup at a time on low speed until combined.
  5. Roll the cookie dough into balls with about 1 tablespoon of dough per ball and roll in granulated sugar.
