Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1 1/2 cups fresh apricots, pitted and sliced
- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8-inch square baking dish or line it with parchment paper for easy removal.
- Whisk together the flour, baking powder, baking soda, and salt in a medium bowl. Set aside.
- Cream the softened butter and granulated sugar together in a large mixing bowl until light and fluffy, about 3-4 minutes.
- Beat in the egg and vanilla extract until well combined.
- Add the dry ingredients to the wet mixture gradually, alternating with the sour cream, beginning and ending with the flour mixture. Mix until just combined.
- Fold in the sliced apricots gently, ensuring they are evenly distributed throughout the batter.
- Pour the batter into the prepared baking dish and smooth the top with a spatula. If using, sprinkle the cinnamon evenly over the top.
- Bake in the preheated oven for about 40-45 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool for a few minutes before slicing and serving. Enjoy!
