Description

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 1/2 cups fresh apricots, pitted and sliced
  • 1/2 teaspoon cinnamon (optional)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch square baking dish or line it with parchment paper for easy removal.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl. Set aside.
  3. Cream the softened butter and granulated sugar together in a large mixing bowl until light and fluffy, about 3-4 minutes.
  4. Beat in the egg and vanilla extract until well combined.
  5. Add the dry ingredients to the wet mixture gradually, alternating with the sour cream, beginning and ending with the flour mixture. Mix until just combined.
  6. Fold in the sliced apricots gently, ensuring they are evenly distributed throughout the batter.
  7. Pour the batter into the prepared baking dish and smooth the top with a spatula. If using, sprinkle the cinnamon evenly over the top.
  8. Bake in the preheated oven for about 40-45 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow to cool for a few minutes before slicing and serving. Enjoy!
