Description

A delightful fall treat that combines the sweet and tart flavors of apples with warm spices like cinnamon.

Ingredients

  • ½ cup brown sugar
  • 1 ½ teaspoons ground cinnamon
  • 2 large eggs (room temperature)
  • ½ cup granulated sugar
  • ½ cup butter (melted)
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 cups chopped apples (Pink Lady, Gala, or Honeycrisp – peeled and chopped, about 2 apples)

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare an 8 x 5 inch loaf pan by greasing and flouring it or lining it with parchment paper. Set aside.
  2. In a small bowl, whisk together the brown sugar and cinnamon, then set it aside.
  3. In a large mixing bowl, whisk the eggs and granulated sugar together until fully combined.
  4. Stir in the melted butter and vanilla extract until the mixture is smooth.
  5. Combine the all-purpose flour, baking powder, baking soda, and salt into the egg mixture. Mix until just combined.
  6. Gently fold in the chopped apples.
  7. Pour half of the batter into the prepared loaf pan. Sprinkle about three-quarters of the brown sugar mixture over the batter.
  8. Spread the remaining batter on top of the brown sugar layer and sprinkle the remaining cinnamon sugar mixture over the top, swirling it into the batter.
  9. Bake for 35 to 45 minutes, or until the top is golden and a toothpick inserted comes out clean or with a few moist crumbs.
  10. Allow the bread to cool completely before slicing and serving.

Notes

Use fresh apples for the best flavor. Consider adding nuts or dried fruits for variations.
