Ingredients

  • 6 large eggs
  • 1/4 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped cooked bacon
  • 1/4 cup chopped bell pepper
  • 1/4 cup chopped onion
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 12-cup muffin tin or use silicone muffin liners.
  3. In a large bowl, whisk together the eggs and heavy cream until well combined.
  4. Stir in the shredded cheddar cheese, cooked bacon, chopped bell pepper, and chopped onion. Season with salt and black pepper to taste.
  5. Pour the egg mixture evenly into the muffin cups, filling each about two-thirds full.
  6. Bake for 18-20 minutes, or until the egg muffins are set and lightly golden. Let cool before removing.
