Delicious gluten-free almond flour cookies that are soft, chewy, and lightly sweetened, perfect for any time of the day.
Ingredients
- 2 cups almond flour
- 1/2 cup chocolate chips
- 1/4 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 egg
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, baking soda, and salt.
- In another bowl, whisk together melted coconut oil, honey (or maple syrup), egg, and vanilla extract.
- Mix the wet ingredients into the dry ingredients until combined. Fold in chocolate chips.
- Scoop tablespoons of dough onto the prepared baking sheet, spacing them apart.
- Bake for 10-12 minutes or until the edges are golden.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For a sweet-salty touch, sprinkle some sea salt on top before baking. To store, keep in an airtight container at room temperature for up to a week.
