Description

Delicious gluten-free almond flour cookies that are soft, chewy, and lightly sweetened, perfect for any time of the day.


Ingredients

  • 2 cups almond flour
  • 1/2 cup chocolate chips
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 egg


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, baking soda, and salt.
  3. In another bowl, whisk together melted coconut oil, honey (or maple syrup), egg, and vanilla extract.
  4. Mix the wet ingredients into the dry ingredients until combined. Fold in chocolate chips.
  5. Scoop tablespoons of dough onto the prepared baking sheet, spacing them apart.
  6. Bake for 10-12 minutes or until the edges are golden.
  7. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For a sweet-salty touch, sprinkle some sea salt on top before baking. To store, keep in an airtight container at room temperature for up to a week.
