Ingredients
- 1/2 cup farro (uncooked)
- 2 cups kale
- 1 large red bell pepper
- 1 medium cucumber
- 1 large zucchini
- 1/2 cup lemon vinaigrette dressing
- Salt and pepper to taste
Instructions
- Bring 1 cup of water to a boil in a medium-sized pot. Add salt according to your taste preferences.
- Add the uncooked farro and let it cook for about 2-3 minutes.
- Lower the heat, cover the pot, and allow the farro to simmer for about 10 minutes.
- Remove from heat and let it sit for about 2-3 minutes, then fluff with a fork.
- Wash and prepare the vegetables, cutting red bell pepper, cucumber, and zucchini into small cubes.
- Combine the chopped vegetables and washed kale in a large mixing bowl.
- Add the cooked farro to the bowl and mix well.
- Drizzle with lemon vinaigrette, and season with salt and pepper to taste. Add a protein of choice if desired.
